Our method in processing natural anaerobic, coffee cherry is first per-sorted then floated in water tanks to remove low density cherries before being sealed in an air tight barrel with valves regulating oxygen output and the barrel is immersed in water tank to slow down the fermentation process. Once fermentation is complete the cherry is placed on African dry beds to further sort and separate the over-fermented cherries creating a consistent outcome.
